Easy Dinner and Dessert!

I am in love with this salad but I did not take pictures while making it- GO FIGURE! I just took a photo of it right before we ate it! It is a regular on our menu! It's an easy and quick....

*BBQ Chicken Chopped Salad*

Head of Lettuce- Chopped
2 Roma Tomatoes- Chopped
Can of Corn
Chicken Breasts- 1 lb- diced or shredded
Tortilla Chips 1/2 cup

Sauce- 1/4 cup BBQ sauce and 1/4 cup Ranch

Optional things I did not add this time- Black Beans 1/2 cup 
Avocado Slices

Cook the chicken to your liking- I chop into pieces then saute in a pan or I sometimes boil the breasts and shred them.
Chop the lettuce and tomatoes, add to bowl
Open and drain the corn, add to bowl

Once the chicken is done, mix the Ranch and BBQ sauce together then add to salad, you can add more or less ranch/BBQ, I usually just wing it!

Crunch Tortillas on top and mix!

Next is a VERY simple and quick dessert....

*Oatmeal Carmel Bars*

I was planning on just making Oatmeal Chocolate Chip Cookies from the mix until I saw this recipe on the back and I am glad I tried it!

You make the cookie mix the same as usual on the bag.

Grease a 8x8 or 9x9 pan and add 3/4 of the batter, saving the other batter for the next step, cook at 375 for 15 minutes or until golden brown

Usually the next step calls for 35 caramel candies and 1/2 milk, mixed together in microwave, but I had a little bit of Caramel Ice Cream Topping from another recipe that I used. 

Anyhow whichever you chose you pour over the half baked cookie dough.

I did not have nearly enough caramel to get the full effect but I just went with it! :)

Then add the left over cookie dough from the beginning of the recipe and break in pieces and add on top.

Return to the oven for another 15-20 minutes or until golden brown.

I served mine with Vanilla Ice Cream...

Another tasty treat for you...This one is actually my favorite treat!
