Amazing Lemon Crumb Muffins

Sorry my faithful followers for my delay in posts! Vincent and I have been all over the state this week and super busy!

We visited home at the beginning of the week since Papa Bear was out of town for work! We had a lot of fun visiting with our family! We went to lunch twice at a local place that sells home goods, and pretty much anything you can think of! The building is out of an old barn, which is really neat. Well we went on Monday with Grandma S and I fell in love with the view we had from the deck....

Can we say gorgeous! Vincent also loved being outside and there were roosters and chickens running around below so we threw them cheerios and graham cracks and they all ran and fought over them... Vincent was cracking up!

So when my mom (Grandma E) asked where we wanted to do lunch Weds, I knew I wanted to go back here!! 

There was also another reason I wanted to visit back to the resturaunt... and clearly it would have to be for something sweet....they have the most amazing Lemon Crumb Muffins and today I found the recipe and made my own... I seriously ate 5 today!!! :) Here is the recipe! You will absolutely LOVE them!!

I made the whole batch but I would cut it in half if I were you! I am stuck with 40+ muffins, luckily we are seeing family this weekend so I will spread the muffin love! :)

Lemon Crumb Muffins  


2 cups Butter (4 sticks) - Melted
2 cups Sour Cream
8 Eggs
2 TBS Lemon Juice
5 Fresh Lemons
4 cups Sugar
6 cups Flour
3/4 tsp Baking Soda
3/4 tsp Salt

Mix all the dry ingredients together in a bowl, set aside

Grate the rind of the lemons, also set aside.

Whisk together eggs, sour cream, butter and lemon juice until smooth.

Once smooth, fold in the lemon rinds.

Then add the dry ingredients slowly.

I had to add very slowly as you see my normal mixing bowl could not fit all the batter...I used my biggest bowl and held on tight while it mixed! :)

Spray the muffins pans VERY WELL! 

Once mixed, empty the batter into the pans, I always use an ice cream scoop, helps with not having dribbles all over!

Now time to mix the streusel topping!

1 1/4 cups Flour
1 1/4 cups Sugar
1/2 cups softened butter 

Mix together flour and sugar then add the butter, work into dry ingredients til crumbly.

Once mixed add to the top of the muffins use about 1 TBS per each muffin, tap down with your fingers so the topping sticks well to the batter.

Bake for 18-20 minutes!

While the muffins are baking, mix together the Lemon Glaze

1/2 cup Sugar
1/2 cup Lemon Juice

Mix together until sugar is dissolved.

Once the muffins are out of the oven, poke them with tooth picks, 6-8 pokes each and add the lemon glaze to each - about 1/2 tsp each.

And there you have it! The BEST Lemon Crumb Muffins!! :) ENJOY!
