Easy Salad and Dessert... Plus nakey baby swim!

Wow, so all I feel like I am posting about anymore is recipes! But that is what I am doing in my spare time, lots and lots of cooking so I do not have to worry about stepping foot in the kitchen when Luke arrives! These two recipes are actually just easy ones for everyday use! This weekend I will be cooking 2 new recipes that my husband actually picked out!! Last night I was in bed looking through recipe books and he said he was not tired yet so I said that he could help me pick out a few recipes...to my suprise, he actually did!! :) So I will post the recipes he chose later this week! They look pretty good I must say! I love my husband! :)

Here is a quick and VERY EASY salad that I like to make during the day! 

  Strawberry and Spinach Salad

All you will need is :
Vinaigrette- I like Brianna's Blush Wine 
Almonds- Diced (you can also use any nut you like)

Just add all the ingerdiants together and there you have it! A yummy easy salad treat! 

Next on my easy recipes:

Fruit and Nut Baked Apples

What you will need:
Crock Pot
4 large Apples- I used Braeburn 
1 TBS Lemon Juice
1/3 cup raisins
1/2 cup chopped walnuts or pecans
3 TBS packed brown sugar
1/2 tsp cinnamon
2 TBS melted butter

Scoop out the center of the apples, leaving about an inch wide cavity, I used a tsp to scoop the inside and it worked perfect! 

Brush the outside of the apples with lemon juice so they do not brown. 

Mix raisins, walnuts, brown sugar, cinnamon, and butter.

Turn the crock pot onto low and fill with 1/2 cup water.
Scoop the sugar mixture into the apples and place in the crock pot.
Cook for 3-4 hours, until soft.

Toward the end I sprinkled them with cinnamon

Carefully take the apples out - I would recommend letting them cool a little, as mine turned the ice cream to instant soup! :)

Serve with Ice Cream!

I would also recommend this ice cream... for those who want Vanilla and those who want Caramel

Jordan was out grilling and Vincent decided he REALLY wanted to take a swim in the hot tub....

He had a total blast and did great, he got a little dare-devilish and went for the deep part a few times, but did great with it!

Vincent also was loving his corn on the cob for dinner!
