Project: Meals for Luke's Arrival - Jordan's Picks!

A few weeks ago while lying in bed I handed my husband a cook book to help me find recipes for meals to make for Luke's arrival. I was shocked that he actually picked a few out! I made them a few weeks back and figured I would post the recipes and the results from our taste testing session. I will add what we would have changed to make recipes better at the end of each recipe!

The first recipe was....

Artichoke-Olive Chicken Bake

What you will need...

1/2 Cups Uncooked Rotini Pasta
1 TBS Olive Oil
1 Medium Onion, chopped
1 Green Pepper, chopped
1 can (14 1/2 oz) Diced Italian Herb Tomatoes
1 can (14 oz) Artichoke Hearts Quartered
1 can (6 oz) Sliced Black Olives
2 cups Shredded Mozzarella Cheese
1 tsp Italian Seasoning

Preheat oven to 350, Spray 9 x 13 inch baking dish with cooking spray

Cook Pasta according to package- Drain and set aside

Meanwhile, in a large pan with olive oil heat onions and pepper for 1-2 minutes. Add chicken, tomatoes (undrained), pasta, artichokes, olives, and Italian seasoning; mix until combined. 

Place half of chicken mixture in dish, sprinkle with half of cheese. Top with remaining chicken mixture and cheese.

Bake covered, 35 minutes.

Our review of the recipe: It was pretty bland! I think next time I would add green olives, and maybe a can of tomato sauce. But all in all it was good! 

Second recipe choice was...

Indian-Spiced Chicken with Wild Rice

What you will need...

1 tsp salt
1 tsp ground cumin
1 tsp black pepper
1/2 tsp ground cinnamon
1/2 tsp tumeric
4-5 boneless chicken breasts (about 1 lb)
2 TBS olive oil
2 carrots sliced (I used a can of carrots)
1 red bell pepper, chopped
1 rib celery, chopped
2 cloves of garlic, minced
2 cups chicken broth
1 cup raisins 

Combine all the spices and rub onto the chicken, cover and refrigerate for 15 minutes.

Note: I had to make more of the spice mixture as I like my chicken really coated

Preheat oven to 350

Heat oil in a larger skillet. Add Chicken; cook 2 minutes per side or until browned.

Remove chicken and set aside.

In same skillet heat carrots, pepper, celery and garlic. Cook for 2 minutes, add rice, cook for 5 minutes. Next add chicken broth and seasoning packet from rice: bring to a boil. Remove from heat and stir in raisins.

Pour into prepared dish, place chicken breasts on top.

Cover tightly with foil and bake 25 minutes, or until chicken is no longer pink.

Our review: It was VERY GOOD! I loved the taste of the raisins in the rice! Will for sure be making this one again!

I thought both recipes turned out well, I will be very happy in a few weeks when Luke arrives and I will not have to make dinner! I will just grab these meals and let them thaw and reheat and VOILA dinner will be done! I just hope they all freeze well :)
