BBQ Beef and Corn Shepherd's Pie

The other week when I was on Betty Crocker and found the wonderful Irish Cream Brownies recipe I was browsing their dinner recipes and decided to give a few a try.


I am always open to new recipes and looking for new recipes to make my husbands tummy happy and full of goodness. Plus Vincent loves anything with flavor so I love to try things with spice! This recipe fit all the criteria for this household!


BBQ Beef and Corn Shepherd's Pie




You will need 
1 lb Ground Beef
1/2 cup sliced green onions (8)

1 cup BBQ Sauce- I used Sweet Baby Rays Honey BBQ

 1 can (11 ounces)Mexicorn (whole kernel corn with red and green peppers, drained)

1can (4 ounces) chopped green chiles, undrained

1 package 4 cheese mashed potatoes (I used scallop potatoes)

1/2 cup shredded Cheddar cheese (2 ounces)

1 cup corn chips


Cook the ground beef, 1/4 cup of the onions in a skillet.
Drain once meat is browned.


Stir in BBQ Sauce, 3/4 cup of the corn, and the chillies.
Heat to boiling, reduce heat to low to keep warm.


Meanwhile cook the potatoes according to the package.
Once the potatoes are cooked add remaining onions and corn.
Since I used scalloped potatoes I had to somewhat mash them with the spatula I used.
Let stand 5 minutes.


Layer on your plate starting with the beef mixture on the bottom.
Top that with the potatoes, sprinkle with cheese and corn chips!
ENJOY!




This meal was quick and easy, the boys really liked it! I will for sure make it again!
