Dinner and Dessert....

I have actually been cooking a little more in the past few weeks, usually Jordan grills for us but when he is out of town I am on my own! UGH! haha I usually try to make something quick and easy like grilled ham and cheese or homemade pizza! 

Here is a recipe for my favorite Chocolate Cake that I made for our anniversary last week and also one of my favorite homemade pizzas! I did not make these the same day...I am not that talented! haha

White Chicken and Ranch Pizza
Pizza Crust - thanks Angela and Leslie....
1 cup warm water
1 package yeast
2 T Olive Oil
1 t sugar
1 t salt
1 1/2 cups Whole Wheat Flour
1 cup regular flour

Dissolve yeast in water, mix in oil, sugar, salt. Stir in flours and work into a ball. Cover in a bowl and let rise for 30 mins. Preheat over to 500. Roll our dough and bale 8-10 mins. Remove from oven, add desired toppings and bake another 8-10 minutes!

I always stab my crust with a fork so it doesn't rise weird! Ps do not laugh at my crappy crust edging abilities!
Ranch Dressing
Tomato (chopped)
2-3 green onions (chopped)
Chicken (chopped or shredded)
Mozerella Cheese
Cheddar Cheese

Directions- Use the ranch as  your "sauce" I use a TON haha but use as much as you need to cover the crust.

Sprinkle with mozerella cheese (I use a lot of this also). Top with tomato, green onions and chicken. Final step is to top everything with cheddar cheese. 

Bake and Enjoy!!

My Favorite Chocolate Cake

What you will need
2 cups sugar
3/4 cup Hershey's Cocoa Powder 
1 1/2 tsp baking soda
1 1/2 tsp baking powder
2 eggs
1/2 cup veg oil (we use coconut oil)
I cup boiling water
1 3/4 cup all purpose flour (I use cake flour)
1 tsp salt
1 cup milk
2 tsp vanilla

Preheat oven to 350. Mix dry ingredients together in your mixer. Add eggs, milk, oil and vanilla. Mix for 2 minutes. Stir in boiling water...BATTER WILL BE THIN...like REALLY watery. 

Pour into 2-9 inch pans!

Bake 30-35 minutes, I always under bake mine, makes them moist!

Frosting time....
You will need- 
1/2 cup (1 stick) butter
2/3 cup Hershey's Cocoa
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla extract

Melt butter. Stir in cocoa. Add vanilla. Slowly add milk and sugar until desired consistency. 
Cool cakes, ice them and then ENJOY with some ice cream!! YUMMMMM!
 Warning the icing is like FUDGE...addicting!!!
