Pumpkin Whoopie Pies...

I saw these on Pinterest Sunday and had to make them ASAP! So I did just that....I ran out to the store and got all my goods and make these bad boys...

I used Rachel Ray's recipe because it seemed pretty straight forward and easy....
which is very true...
This makes about 12 whoopie pies...double if you want more..
You will need....
1 stick of butter- melted
1 cup brown sugar
2 eggs
1 cup canned pumpkin puree
1 TBS pumpkin pie spice
1 tsp vanilla
1 tsp baking powder
1 tsp baking soda
3/4 tsp salt
1 2/3 cup flour
Preheat oven to 350
Whisk together sugar and butter.
Add in eggs, pumpkin, spices, baking soda/powder and vanilla.
Fold in the flour...

Drop by spoonful to a greased cookie sheet. Bake 10 minutes or until springy to touch.
Dry on a cooling rack.

Meanwhile mix together the frosting...
You will need...
1/2 stick softened butter
1 cup powdered sugar
4 oz cream cheese
2 pinches of salt
1/2 tsp vanilla
(pumpkin pie spice-your choice)

Cream together butter and cream cheese. Add in vanilla and salt. Slowly add and mix in the powdered sugar to desired consistency. Frost the cookies once they are cooled.
I tasted the cookies and realized they were not super "PUMPKINY" so I added pumpkin pie spice to the frosting for a special touch...I loved it!

Frost those little guys and ENJOY!

  2. I think anything made from pumpkin must be sent from heaven.

    Pinterest, on the other hand, is the devil, only because it SUCKS up hours of my time! It's my guilty pleasure while nursing at 3 am. I'm following you. :)
