Wide Awake & A Recipe....

It is about 6 am and I am WIDE AWAKE....typically I would not mind this 
but I have not slept a good night since last Thursday. 
It is no joke like I am in the first weeks of motherhood again and it is not settling well with me.
Unless I am mistaken and it is ALREADY March!?!?
 The overwhelming feeling of hell that my body feels is NOT COOL!

Luke started Friday with a runny nose and was crying so trying to be a good mom
I let him come into bed with us
WORST decision EVER...
He is not a good sleeper with us, so after a few hours of him kicking me and crying
I sent him back to his room to hopefully sleep...
and thankfully he did. 

Vincent of course picked up the runny nose by the weekend but he is a rockstar (or so I thought)
Jordan picked up something and did not sleep Saturday or Sunday night
He was in and out of bed 
I wake up to the drop of a pin so I was also wide awake
everytime he sniffled or moved...

Things were looking up Monday and I knew that I would finally get a good nights sleep
I popped a benadryl :)
And hopped into bed and decided to check blogs and read on my iPad...
Becky had a deal for 10 free Christmas cards, so I ran downstairs to order some...
ordering some turned into ordering 50!
By the time I was finishing I heard a horrible cough from Vincent's room
Then it sounded like he could not breathe
I bolted up the stairs to check on him

His poor little throat is making him sound like he is gasping for air (horrifying)
I get him in our bed because I want to be beside him in case of any emergency
and grab the vaporizer and plugged it in on our nightstand
which means...
He sleeps on my side of the bed...I am very territorial with sleeping on the edge
I like my feet to hang over the edge and I just like being able to sprawl out
Well I couldn't, I was in between Jordan and Vincent...
(We have a king sized bed but it still not enough room)
Vincents breathing was loud intermixed with some ninja kicks and snoring
and I laid WIDE.....AWAKE....
Jordan is an early riser so when I heard him get up I knew my trying to sleep was over...
so here I am writing a blog post!

Typically I would be doing My Take Tuesday but with the holidays I am skipping it!
Instead I have a little recipe action for you!

Pumpkin Pie Bars
 you will need:
1-1/3 cups flour
3/4 cup  granulated sugar, divided
1/2 cup packed brown sugar
3/4 cup  cold butter or margarine
1 cup old-fashioned oats
1/2 cup  chopped Pecans
1 pkg. (8 oz.)  Cream Cheese, softened
3  eggs
1 can (15 oz.) pumpkin

1 Tbsp.  pumpkin pie spice

*Some of the reviews online said that there was not enough sweetness
 so I added cinnamon and extra pumpkin spice to the topping and also extra brown sugar*

HEAT oven to 350°F.
Grease a 9x13 inch pan.
Mix flour, 1/4 granulated sugar and brown sugar in medium bowl; cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. ( I just used my kitchen aid mixer)    Stir in oats and nuts.
Reserve 1 cup oat mixture; press remaining onto bottom of prepared pan.
 Bake 15 min. Beat cream cheese, remaining sugar, eggs, pumpkin and spice with mixer until well blended. Pour over crust; sprinkle with reserved crumb mixture.

BAKE 25 min.; cool 10 min. 
*I thought it was good, I think the cinnamon helped a lot! It takes great cold with whipped cream or ice cream*

I am making a special cake for my dad. It involves ZERO flour!

These guys are going to have a rough morning, thankfully they got to roam free while they were alive!
 I cannot wait to eat Thanksgiving dinner!!! YUM!
We are actually only doing ONE Thanksgiving this year,
 down from 3 last year so we are excited to have a laid back holiday!

  1. Hope you're able to catch up on some sleep soon! I have three small kids who all came down with a nasty cold/cough last week. I am also a light sleeper so I spent my nights listening to each cough, fuss, heavy breathe, etc. Not fun at all so I totally feel your pain!
