Congrats Fondue Style

A few weeks ago Jordan's brother TJ found out where he will be doing his residency as a surgeon. In medical school they do a whole match process where the students pick their top choices for where they would like to attend their residency and in return the hospitals also pick the doctors they would like to have in their units. Well that Monday he found out that he did indeed have a match, then it was a waiting game until Wednesday at the ceremony that he actually found out exactly where he would be going...I can not even imagine the stress and anxiety this whole process causes so many medical students. Anyways he got one of his top 3 choices which is amazing! We are sad he will not be as close as he is now but he will only be a few hours away! In a few short months he has told us we have to address him as Doctor TJ...HAHA

We celebrated his birthday and matching that weekend at The Melting Pot! It was perfect because they are usually super busy and they gave us a private room with a huge projection screen and we ate and watched football! Plus since the meal has 4 very long courses (3 hrs or more) and we had the little men with us it was great that we had our own room so they could run around and do as they please in between courses, if it had not been for that room the dinner would have been a sheer nightmare! Here are some pictures from the night (taken with my old camera...boo for the quality!)!

Uncle TJ is also Vincent's Godfather which is why Vincent is learning his doctor skills early!

BBQ Beef and Corn Shepherd's Pie

The other week when I was on Betty Crocker and found the wonderful Irish Cream Brownies recipe I was browsing their dinner recipes and decided to give a few a try.


I am always open to new recipes and looking for new recipes to make my husbands tummy happy and full of goodness. Plus Vincent loves anything with flavor so I love to try things with spice! This recipe fit all the criteria for this household!


BBQ Beef and Corn Shepherd's Pie




You will need 
1 lb Ground Beef
1/2 cup sliced green onions (8)

1 cup BBQ Sauce- I used Sweet Baby Rays Honey BBQ

 1 can (11 ounces)Mexicorn (whole kernel corn with red and green peppers, drained)

1can (4 ounces) chopped green chiles, undrained

1 package 4 cheese mashed potatoes (I used scallop potatoes)

1/2 cup shredded Cheddar cheese (2 ounces)

1 cup corn chips


Cook the ground beef, 1/4 cup of the onions in a skillet.
Drain once meat is browned.


Stir in BBQ Sauce, 3/4 cup of the corn, and the chillies.
Heat to boiling, reduce heat to low to keep warm.


Meanwhile cook the potatoes according to the package.
Once the potatoes are cooked add remaining onions and corn.
Since I used scalloped potatoes I had to somewhat mash them with the spatula I used.
Let stand 5 minutes.


Layer on your plate starting with the beef mixture on the bottom.
Top that with the potatoes, sprinkle with cheese and corn chips!
ENJOY!




This meal was quick and easy, the boys really liked it! I will for sure make it again!

Splish Splash

One of my favorite times of the day is bath time! It used to be the MOST terrifying time of the day before Luke could sit up well! I used to have to juggle Vincent bathing and holding squirmy Luke still while trying to wash them both down!

 But now the boys just play and play and PLAY! It is perfect! Luke loves to lay down and kick his little legs like crazy! Having Luke in the water has loosened Vincent up a little bit, for the past few months V has been terrified of the water and would only stand during baths, now he is letting loose again splashing like crazy!~









Plus I love the smell of their hair after baths....HEAVEN!! Method sqeaky green smells amazing...it has mallow in it which smells like marshmallows...YUMMMMMMMO! Or Johnsons and Johnsons Apple Honey....both are to die for...I may even use their lotion on myself!! haha

We got a set of 4 at Costco this Christmas and I cannot find the set anywhere online but here is a single one...
You wind them up and they glide across the water and squirt! You can also use them on the floor!

Candy Heaven!

I have been on the search for finding the coolest candy for Vincent's Candy and Dessert Table for his 2nd Birthday Party! I had my order ready to go on Oriental Trading for some fun retro candy, that is until my mom said she heard there was a cool retro candy store right here in town! Earlier this week we went to check it out....

It was a small store on the corner...smaller than I expected but when we opened the doors it was like Willy Wonka and the Chocolate Factory...okay not that cool...but it was CANDY HEAVEN!


The walls and shelves were stocked from the floor to the ceiling...




I got a ton of these for the Candy Buffet! I LOVE THESE!




I had to get a few packs of smokes...candy cigarettes, my best friend and I used to think we were SO COOL when we bought these at the town market as kids!

I had a blast picking and choosing exactly what would work perfect for the party. They had EVERYTHING and more! I bought a ton of Salt Water Taffy and I am trying my best to stay out of it so there is plenty for the party...I am guessing i should not have bought the candy this early. I just wanted to be prepared in case I had to order online vs buying in the store. 

We are doing a "Monster" Easter Egg Hunt at Vincent's Party , but not filling the eggs with candy, instead they will pick the candy they want from the candy buffet, talk about killing two birds with one stone...

Plus candy looks cuter in glass jars than inside of plastic eggs right....haha

It is so CRAZY to believe that this little man will be TWO in less than a month..


It seriously makes me want to cry how QUICKLY he has grown...but we are having oh so much fun learning and playing everyday. I love hearing him talk! It is so freaking adorable!

I cannot wait to celebrate his birthday with all of our family and friends!
