Monday Meals: Chicken {with goat cheese & arugula} from Miss Natalie!

Here is her recipe for Chicken with Goat Cheese and Arugula:

I was so excited when Allie asked me to guest post a recipe on her blog.  I have just recently met Allie, and boy am I glad I did!  Not only is she a great mommy, she is also someone I am learning from since she also is living and eating the Primal Lifestyle.  The first blog post I read of her was about Primal way of eating which my husband and I had just started.  So I'm glad to know a veteran in these waters to help guide me through this new food journey.  So without further delay---here's my yummy recipe!


Chicken with Goat Cheese and Arugula
-4 chicken breasts (about 1/2 lbs total), breasts pounded thin
-Salt and pepper seasoned to taste
-1 large bunch of arugula (about 4 oz trimmed)
-4 oz of soft goat cheese broken into small pieces
-1-2 tbsp butter or olive oil
Preheat oven to 425 degrees.  Pound the breasts thin make them thin enough for rolling. 
Season the chicken pieces with salt and pepper.  Lay cutlets flat, smooth side down.  Layer with arugula leaves and pieces of goat cheese in the center.  Starting with the narrowest ends, roll up the chicken cutlets and seal with toothpick to prevent unrolling.
Heat the oil on medium high and place the chicken in the pan and brown all sides.
Place the skillet in the oven (or move to an oven safe pan) and cook until chicken is cooked through, about 10-12 minutes.
Now enjoy your tasty chicken with a side salad of your extra arugula and whatever toppings you like.
