Zucchini Pasta Recipe

If you know me, you know I am now all about creative ways to cut carbs!
I found this recipe on Mark's Daily Apple
I love spaghetti but am always looking for ways to get more veggies...
Therefore when I ran across this I had to make it....
And it was seriously so simple...

You will need
1 zucchini per person {I used two in case I didnt like it haha}
Whatever veggies you want {I chose garlic, red onion and grape tomatoes}
Meat {optional- I made this on Fridays so we chose no meat for Lent, I would add chicken though}
Olive Oil

Grate or slice the zucchini to noodles {I used my cheese grater}
Allow to dry for 2-3 hours 
{I threw mine in the oven on like 175 to dry it out because I didnt wanna wait}
 Saute the onions and garlic in olive oil, add whatever spices you like {parsley, sea salt & pepper}
 Saute all together with the zucchini "pasta"
 I threw the tomatoes in for the last minute of sauteing... 
That is it!!!
I loved this recipe, it was so easy and simple!
