I have been on a crazy Cauliflower kick the past two weeks. A girl in our accountability group posted a cauliflower stirfry dish last week and I was blown away by the taste. It was legit Chinese taste without the crap meat! Because let's be serious I always get creeped by the meat quality at some Chinese places.
Last night I was going to make the same dish then I started getting creative. I had seen recipes with cauliflower as rice so I figured what the help, let's get fancy up in here! So here is the recipe. Pretty darn easy and holy amazing taste!
You will need:
Head of Cauliflower diced and raw
Organic Soy Sauce
I diced the raw cauliflower and tossed it in the blender. I pulsed it really easily so it didn't clump and mixed it so it didn't puree. This was the hardest part of the recipe lol which isn't too hard at all. After it was rice consistency I sautéed it in coconut oil and lime juice until it browned.
I'm a separate pan I sautéed the veggies in lime juice, garlic, and a little soy sauce. I eye ball everything so just taste along the way. The soy sauce is salty so add slow!
And that's it! Serve your veggies over your rice and enjoy!!! You can also add meat to this! Its legit so darn good!!!
Also here is a little update from week one of our group!! I've been updating on my YouTube page (https://www.youtube.com/user/alliej86) every day which keeps me way more accountable but here's my results with week one of the 21 Day Fix. Pretty darn pumped. I lost the big weight (20+ lbs) last year so this year is all about toning and maintaining myself! Hard to believe a year ago I had a one month old baby and was 40+ lbs heavier. Crazy what a year can do!
